Garlicky Miso Dressing

In From the Source, Season 3, we celebrated all things Miso, experimenting with Miso Master products in my kitchen! This dressing is inspired by a classic caesar dressing, letting the miso take charge of the depth of flavor that anchovies normally bring.

 

 

Garlicky Miso Dressing

Equipment

  • food processor Note: If using a 12-cup food processor or larger, double the recipe for best results. 

Ingredients
  

  • 1 whole egg
  • 2 cloves garlic peeled
  • 4 teaspoons mellow white miso
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper freshly cracked
  • 1 teaspoon dijon mustard
  • 2 dashes hot sauce
  • 1/2 teaspoon worcestershire or soy sauce
  • 1/4 cup mild extra virgin olive oil such as arbequina
  • 1/4 cup grapeseed oil

Instructions
 

  • In the bowl of a food processor, add all ingredients except the oils and blend until combined.
  • Combine oils and add in a slow, steady stream while the food processor is running, until all olive oil is added, and the mixture appears smooth and homogenous.
  • Season with additional kosher salt to taste.
